The Best Blender Salsa/Gluten-Free

Salsa is such a great snack when you have to eat gluten-free.

Most salsas are gluten free, even better, when you make it yourself, it can be guaranteed to be gluten-free!

Over the years I have been working on a blender salsa that tastes great, and is quick and easy to make.

I use cherry tomatoes in this particular recipe.

This recipe serves up to 4 people, but you can simply double or triple the recipe if you need to feed a larger crowd.

Even better?

You can blend up this salsa in under ten minutes, which is a win at our house!

INGREDIENTS :

-1 1/4 cup cherry tomatoes

-1/4 teaspoon minced garlic

-1/8 onion or 2 strands of green onion optional

-handful of cilantro

-1 teaspoon cumin

-1 teaspoon salt

-1/2 teaspoon black pepper

1/2-1 jalapeno (1 whole jalapeño will provide medium-hot heat)

Great salsa– and there are many options for gluten-free tortilla chips!

Instructions:

  1. Wash all vegetables well.
  2. Blend ingredients as you go.
  3. Enjoy!

What’s on the menu for Sunday dinner for our family …

Sunday dinner is always tasty and fun to prepare for.

Since I have to eat gluten-free it does take some planning ahead.

Luckily this Taco-chicken dish is easy, delicious, and doesn’t take very many ingredients.

The best part about this meal?

You can literally dump all the ingredients in the crockpot and the crockpot does the cooking.

Also— our family loves to crush tortilla chips over the top of it… it adds a tasty crunch!

For sides we have garden food: green beans, cherry tomatoes, and zucchini.

My family also loves Krusteaz gluten free cornbread so we will cook that up as well.

The Best Gluten-free White Chicken Chili!

You will love the flavor of this chili!

This chili has literally taken months to perfect!

Finally, this white chicken chili has a tasty flavor, that you’re entire family will enjoy!

Even better? It’s gluten-free!

The key is to make sure that you use a gluten-free chicken broth!

Prep time: 15 minutes

Cook Time: 30 minutes

Ingredients:

-48 ounces Gluten-Free Chicken broth/stock

-teaspoon lawry’s seasoning salt

-1/2 cup water

-2 or 3 chicken breasts, cooked and shredded

-4 ounce can of green chilis

-1 can of corn (drained)

-2 cans great northern beans (drained)

-1 teaspoon cumin

-1 teaspoon black pepper

-2-3 teaspoons chili powder

-dash of oregano

-dash of cayenne pepper

-1 teaspoon salt or seasoning salt

-1/2 cup heavy cream

-4 ounces (half of a block) cream cheese

Optional toppings: Jalapeno, cheese, chips

Directions:

  1. Cook chicken. Shred the chicken. Set aside.
  2. Combine all ingredients EXCEPT heavy cream and cream cheese.
  3. Let these ingredients simmer for about 20-25 minutes.
  4. Add heavy cream and cream cheese. Allow to cook until cream cheese has melted in.
  5. Add additional toppings if wanted.
  6. Eat and enjoy!

Tasty Asian Chicken Marinade/ Gluten-free

This delicious chicken marinade is not only gluten-free, it’s also simple and easy to make!

The key ingredient to help make sure this recipe is gluten-free is to make sure you use gluten-free soy sauce or braggs liquid aminos.

Ingredients:

-1/2 cup gluten free soy sauce

1-3 pounds of chicken

-1/2 cup brown sugar

-1/4 or 1/2 teaspoon of minced garlic

-1 Tablespoon Worcestershire sauce

-dash of crushed red

-sesame seeds to your liking

-dash of pepper

We grilled the chicken and it tasted delicious !

Directions:

1. In a zip-lock bag combine all ingredients.

2. Zip lock the bag securely. Refrigerate the marinade for 1-24 hrs.

3. Cook the chicken. You can grill it, bake it, or fry it.

4. Enjoy!

The Best Gluten-Free Cookies and Hot Cocoa Mix!

With the holidays around the corner ..this is a fun time to enjoy family and friends company while enjoying some tasty treats.

When you love a gluten-free lifestyle, often times the common treat isn’t usually something that passes as gluten-free.

Well— don’t worry!

Below are two recipe links to our delicious gluten-free oatmeal chocolate chip cookies, as well as our favorite homemade hot cocoa.

Here is our Gluten-fee cookie recipe. Keep in mind, when you take the cookies out of the oven they may not look quite right, but as you let them sit for a minute on the cookie sheet you will see they make great cookies with a delicious texture and flavor!

I have always enjoyed homemade hot cocoa better than store bought .. the flavor is more rich and vibrant!

However – if I do get a store bought hot cocoa, my top choice is Stephens mint hot chocolate.

Delicious Gluten-Free Fried Rice

This Delicious Gluten-Free Fried Rice is sure to quickly become a family favorite!

The best part? It is VERY easy to make.

Ingredients:

2 Tablespoons olive oil

-1 cup chopped carrots

-1/3 cup sweet onion

-1/2 cup frozen corn

-1/4 teaspoon minced garlic

-1-2 stems green onion

-3/4 cup spam (or chicken, tofu, any meat of your choice)

-2 eggs

-1 cup cooked rice

-1 tablespoon sesame oil

-3 Tablespoons gluten-free soy sauce

-1/2 teaspoon white pepper

Directions:

  1. Heat large pan to medium heat and pour olive oil in the pan.
  2. Saute the following: onion, garlic, carrots, corn. Cook and stir well for about 3-5 minutes.
  3. And rice and stir to combine with other ingredients.
  4. Add spam and stir to combine. (whatever meat you combine make sure it was previously cooked).
  5. Clear half the area of the pan to cook both your eggs. Cook the eggs well and scramble them.
  6. Once eggs are cooked combine them with the other ingredients by stirring well.
  7. Add sesame oil, gluten-free soy sauce, and white pepper. Mix together well.
  8. Optional- Top with chopped green onion and Sriracha sauce.
  9. Enjoy!

Delicious Gluten-Free Oatmeal Chocolate Chip Cookies!

This recipe may be one of my favorites to share! It has taken me a VERY long time to perfect this recipe…but I think you will love it!

Growing up I LOVED my moms oatmeal chocolate chip recipe.

After becoming gluten-free I craved my moms cookie recipe.

It’s only taken me about thirteen years to get it right. But FINALLY I feel like the texture and the flavor is just like the original, delicious cookie that I loved growing up.

I experimented, and using parchment paper is best…it helps the cookie to rise more.

Ingredients:

-1 cup softened butter

-1 cup brown sugar

-1 cup white sugar

-2 eggs

-2 Tablespoons water

-1 teaspoon vanilla extract

-1 1/2 cups flour

-1 teaspoon salt

-1/4 teaspoon xanthum gum

-1 teaspoon baking soda

-2 cups quick oats (gluten-free)

-2 cups chocolate chips (nestle or hershey)

Instructions:

  1. Cream together butter and both sugars.
  2. Add eggs, water, and vanilla and mix until just combined.
  3. Mix in flour, salt, xanthum gum, and soda.
  4. Stir in oats and chocolate chips.
  5. Spoon drop cookie dough on greased cookie sheet and bake for 10-11 minutes at 350 degrees until edges are set and golden brown.
  6. Transfer to cooling racks and enjoy!

The Best Eclair Dessert/ Gluten-Free

Do you like eclairs? If so, you are going to love this dessert.

Even better? This eclair dessert is gluten-free and many people don’t actually realize it’s gluten-free!

This recipe is great for family gatherings, or larger groups. One thing I can guarantee about this recipe is that it won’t last long!

I would recommend taking at least two hours to complete this recipe since you need the crust to cool before adding the pudding mixture.

If you follow the recipe, you will see it’s quite simple to make this eclair dessert, and I am sure you will add it to your favorites.

ECLAIR DESSERT

Ingredients:

Crust:

1 C. gluten-free flour (I prefer cup4cup)

1 stick of butter

4 eggs

1 cup water

dash of salt.

FILLING:

1 8 -oz. pkg. softened cream cheese

1/3 cup powdered sugar

1 6-oz pkg. instant vanilla pudding

3 Cups milk

1 8-oz. container Cool Whip

Hershey’s Chocolate syrup

Instructions:

  1. Bring water to a boil then add butter. Once melted, stir in flour. This will form a stiff batter.
  2. Remove from heat and add one egg at a time, stirring to fully incorporated each time (a mixer works great).
  3. Pour into a 9 x 13 inch cake pan that has been sprayed with vegetable spray.
  4. Bake for 45 minutes or until golden brown.
  5. Remove from oven and cool completely.
  6. Mix softened cream cheese, powdered sugar, 1 cup of milk, and package of instant pudding. Mix well.
  7. Add remaining 2 cups milk, gradually mixing in well.
  8. Pour pudding mixture on top of the cooled crust.
  9. Top with cool whip.
  10. Just before serving, drizzle Hershey’s Syrup on top.
  11. Enjoy!!

Easy and Delicious Cherry Limeade Drink

This cherry limeade recipe is a family favorite!

It’s a simple recipe and it tastes delicious and refreshing.

If you have never tried Cherry Limeade… you’re in for a treat!

In the video above I mention a few tips and tricks, but I would suggest using some pebble ice in the drink if you have access to it… it’s my preferred ice —but really any kind will do.

Ingredients:

1 can limeade

A 2 liter bottle of sprite

1/2 lime

1 1/2-2 cups cold water

1 large pouch of cherry -pomegranate drink flavoring

Ice

Instructions:

1- Cut lime into 1/4ths and set aside

2- Combine all ingredients except lime and ice and mix well.

3- When the drink is mixed well put the pieces of lime in the drink and top off with ice.

4- Enjoy !
