Delicious Gluten-Free Cheesy Potatoes

My entire life I have loved these gluten free cheesy potatoes!

As a young child I didn’t love potatoes but even the , I would always eat these tasty cheesy potatoes.

It’s a simple and delicious recipe.

I use cup4cup flour but really, any gluten free flour will work.

I hope you add it to your family favorite recipes like we do!

Gluten free cheesy potatoes

For Cheese sauce combine:

4 Tablespoons butter (melted)

4 Tablespoons gluten-free flour

2 cups of milk

1/2 jar of cheese whiz

peel and cute 8-10 potatoes.

Instructions:

  1. Create cheese sauce then set aside.
  2. Pre-heat oven to 350 degrees
  3. Prepare potatoes by peeling and slicing.
  4. Transfer potatoes to a 9 x 13 casserole dish.
  5. Pour Cheese sauce over top of sliced
  6. Pour 1-2 cups of shredded cheese over top.
  7. Cover potatoes with foil and cook at 350 for 45 minutes.
  8. Take off foil and place potatoes back in the over for 10 more minutes or until fully cooked.
  9. Enjoy!

Gluten-Free Sunday Dinner Plans That Are Easy and Tasty!

If you live a gluten-free lifestyle, it’s always nice to get some ideas for gluten-free dinner plans.

For the main meal we will have steak. Steak is perfect for the gluten-free lifestyle, all the seasoning you need is salt and pepper. It is important to be careful with seasonings and sometimes it can cross contaminate with wheat.

A Gluten-free Store Everyone Should Know About

I just had to share about a store that sells all gluten-free products a d they are amazing!

The store is located on Spanish Fork, Utah and it’s called Mom’s Place.

Bottom line, this store has some AMAZING gluten free products!

We made the soft pretzels and they were so delicious!

We also tried the gluten free licorice snd they tasted like red vines… so tasty!

Mom’s place ships order free to purchase of $50.00 or more.

Basically, it’s a store that I will continually buy products from because I’ve been very impressed with what I’ve tried.

Isn’t it crazy that Thanksgiving dinner is just right around the corner?

Sometimes these big holiday events are hard to enjoy when you’re gluten free.

Thanksgiving dinner can be gluten free too!

However- when you contribute a gluten-free side dish… that’s your guarantee that you have something to eat.

This side dish is my favorite potato salad recipe.

Know your grocery stores!

Why?

It can save you a lot of time.

Whether you do “pick up” at your grocery stores or perhaps you go inside … know what gluten free items each grocery store has.

Why does this help ?

Options —when you love a gluten free lifestyle options are key.

I rotate between three different grocery stores because I have learned that each store offers different items that are gluten free that I enjoy.

Yes it takes time to learn your grocery stores … but it’s worth it.

The three grocery stores I rotate:

Kroger, Wal-Mart, and Harmons

The Perfect Father’s Day Dinner/Gluten-Free!

If you have been following for a while, you know I have celiacs disease and have to eat gluten-free.

I have learned that gluten-free dinner can still be tasty and delicious.

So for Father’s Day, I had to share the perfect gluten-free dinner!

All the dinner items have recipes linked.

And let’s be honest, sometimes the dinner is the best part for dad’s that love and enjoy food.

So for the main coarse on Father’s Day, we will be making Gluten-free Sweet & Sour Meatballs. These meatballs are one of my husbands top favorites! These meatballs are are full of flavor and the sauce is amazing! The hint of pineapple in the meatballs and in the sauce make for some very tasty meatballs.

Eat these meatballs on top of rice and you will definitely want seconds!

Let’s cook a great Father’s Day Meal!

For side dishes, we will eat this delicious pink berry salad. This fruit salad is simple to make and requires just a few ingredients.

The other side that will taste great with this meal is our favorite gluten-free potato salad. My husband loves potatoes so this potato salad is a must for Father’s Day. It’s very simple to make this potato salad gluten-free, and it is still packed with flavor!

For dessert—well it’s a tough choice, but we will be making the best eclair dessert/gluten-free!

Everyone will love this gluten-free Eclair Dessert!

This dessert is very tasty, and I am always told that people can’t believe it’s gluten-free because the texture tastes just like it would with regular flour….that’s a win!

And one thing we can not forget…a delicious drink.

For Father’s Day, add in this tasty drink, our Cherry-Limeade drink is simple, and easy to make, and tastes wonderful for this warm, summer weather.

Delicious Gluten-Free Fried Rice

This Delicious Gluten-Free Fried Rice is sure to quickly become a family favorite!

The best part? It is VERY easy to make.

I hope you enjoy this recipe, let me know if you end up making this delicious dish in the comments below!

Ingredients:

2 Tablespoons olive oil

-1 cup chopped carrots

-1/3 cup sweet onion

-1/2 cup frozen corn

-1/4 teaspoon minced garlic

-1-2 stems green onion

-3/4 cup spam (or chicken, tofu, any meat of your choice)

-2 eggs

-1 cup cooked rice

-1 tablespoon sesame oil

-3 Tablespoons gluten-free soy sauce

-1/2 teaspoon white pepper

Directions:

  1. Heat large pan to medium heat and pour olive oil in the pan.
  2. Saute the following: onion, garlic, carrots, corn. Cook and stir well for about 3-5 minutes.
  3. And rice and stir to combine with other ingredients.
  4. Add spam and stir to combine. (whatever meat you combine make sure it was previously cooked).
  5. Clear half the area of the pan to cook both your eggs. Cook the eggs well and scramble them.
  6. Once eggs are cooked combine them with the other ingredients by stirring well.
  7. Add sesame oil, gluten-free soy sauce, and white pepper. Mix together well.
  8. Optional- Top with chopped green onion and Sriracha sauce.
  9. Enjoy!

4- Don’t be scared to pull out those delicious family recipes books and replace regular flour with gluten free flour.

Sometimes it takes experimenting but it’s so rewarding to create that delicious meal you loved from grandma .. and make it gluten -free!

Create your own gluten-free recipes with just a bit of an adjustment

My favorite flours that are gluten free are: cup4cup, namaste, and better batter flour.

5- Pinterest!

Even more, start finding some yummy gluten-free recipes and save them to your Pinterest page.

Gluten-Free Sweet & Sour Meatballs

Gluten-Free Sweet & Sour Meatballs are a family favorite around our house.

This recipe is tasty and delicious. Hopefully you enjoy this gluten-free meal, and remember if you don’t need it gluten free you can just swap out the gluten free breadcrumbs for regular.

Enjoy!

Ingredients:

1 lb hamburger

1/2 cup gluten free bread crumbs

1/4 cup milk

1/4 teaspoon minced garlic

1/2 teaspoon ginger

1/2 teaspoon salt

2 teaspoons Braggs Liquid Aminos

1 egg

Black pepper to taste

8 ounces crushed pineapple (reserve juices)

Sauce ingredients:

With reserves pineapple juice, add water to get 1 1/2 cups of water and pineapple juice mixed together.

2 teaspoons liquid aminos

1/2 cup chicken broth

1/2 cup brown sugar

3 Tablespoons vinegar

1/2 teaspoon salt

Create a cornstarch slurry with 1 cup water and 2 tablespoons of cornstarch mixed

Sauce instructions:

1. In a saucepan combine all ingredients and stir constantly for 5-10 minutes over medium heat.

2. Once the sauce has thickened a bit it is ready to be poured over the meatballs.

Directions for Meatballs:

1. Combine all ingredients into a large bowl (do not include reserves pineapple juice). Preheat oven to 350 degrees.

2. Mix ingredients together well with your hands.(gloves)

Meatball mixture

3. Form meatballs into circles … just a bit smaller than a golfball.

4. Place meatballs on cookie sheet pan.

5. Place meatballs in oven for 20 minutes at 350 degrees.

6. Take meatballs out of the oven .. pour sauce mixture over meatballs and cook for another 5 minutes.

7. Serve meatballs over rice or noodles.

8. Enjoy your meal!

*Yields abt 15-20 meatballs*
