Tasty Korean Beef/Gluten-Free


This Korean Beef recipe has been a family favorite for years. The best part with this recipe, is that if you use Braggs Liquid Aminos instead of soy sauce … it’s a simple way to keep it gluten-free and also flavorful.

This recipe only takes about 30 -40 minutes to prep and make.

Our family loves eating this Korean Beef over rice or rice noodles.

The recipe and instructions are below, go make it for your family this week!

Korean Beef Recipe:



  • 1lb hamburger
  • 1 Tablespoon EVOO
  • 1/2 teaspoon minced garlic
  • sprinkle lawrys seasoning salt


  • 1/2 cup brown sugar
  • 1/4 cup Braggs liquid aminos
  • 1 Tablespoon Sesame oil 
  • 1/4 teaspoonminced garlic
  • 1/4 teaspoon ginger
  • dash of white pepper
  • dash of crushed red pepper 



1. Place frying pan on medium heat.

2. Add olive oil and spread it across the pan.

3. Add minced garlic and stir constantly for 2-3 minutes.

4. Place hamburger in pan and cook thoroughly.

5. Drain fat from hamburger, set aside.

6. Start making the sauce in a separate bowl.

7. Add all sauce ingredients and stir thoroughly so there’s no clumps.

8. Turn hamburger pan back on low heat and stir in sauce.

9. Let the sauce cook in for 5 minutes.

10. Place Korean beef on top of rice.

11. Garnish Korean beef with green onion.

12. Enjoy!

How to take time to Read

If you’re following me, you’ll notice this month my goal is to take time for your mental health.

Last week I worked on my mental health by listening to a podcast everyday …. this week my goal is to read for 20 minutes a day. It’s amazing how reading does wonders for your mind and mental health. Reading is a great way to relax and get absorbed into a story.

Relax and Read!

I know it’s EASY to find reasons not to read a book. However, reading a book is so great for mental health in a variety of ways. Here is a list of ways to take time for reading without feeling guilty :

1. Read a book that helps you learn a new skill and feel accomplished after your finished reading. Even if the skill is a “self- help” or “how to better your life” type of book… read it.

2. Find a genre you know you love. When you’re easily sucked into a book there’s less of a reason to think about your long “to-do” list while reading.

3. Remind yourself that reading is taking time-out for yourself and it’s not selfish … reading is uplifting and can help you be more productive in the long run.

4. With the great weather starting to settle in… read a book outside to soak up some natural vitamin d as well.

5. Join a book club and read along with your group. Being able to socialize and discuss the book is not only fun, but great for your deep thinking skills!

So …..go find a book you think you’ll enjoy and start reading!

During this pandemic where the world has turned upside down a bit, take time to enjoy some fun reading and I think you will be surprised by the positive effect reading has on your mental health and stability.

2 Delicious Side Dishes!/Gluten-Free

If you need a tasty and gluten-free side dish to make, here are two delicious dishes I am sharing with you!

These two recipes are used quite frequently in our home. What we love about them, is that they have great flavoring…which is what we are always looking for when eating gluten-free.

Instructions and steps are below the youtube video. And if you are enjoying these recipes please “follow” this blog, it will keep you updated on upcoming posts.





Built up Caesar Salad Mix:


Caesar salad mix bag from the store (Wal-mart, Costco, Kroger etc.)

Add in:

  • Sliced up cucumber
  • 1-2 cups spinach
  • Everything in the bags packet EXCEPT the croutons (they are NOT gluten-free)
  • Parmesan Crisps
  • Parmesan Cheese


  1. Toss all ingredients well except parmesan.
  2. Once the entire salad is mixed thoroughly, add parmesan cheese on top.





Lila’s Banana/Pineapple Fruit SaladIMG_3778


  • 1 can of pineapple tidbits
  • 1 cup sugar
  • 2 Tablespoons cornstarch
  • 1 cup whipped cream (sweetened)
  • 2-6 Bananas (depending on your liking)


  1. In a saucepan, cook all ingredients except cream, bananas and pineapple tidbits.
  2. Cook until the mixture has thickened on medium heat. Usually takes about 5-7 min.
  3. Let this mixture cool down and set aside.
  4. In another bowl, add cup of whipped cream and a teaspoon of sugar.
  5. Mix the whipped cream until a fluffy-type consistency.
  6. Pour in the cooled saucepan ingredients.
  7. Mix in pineapple tidbits and bananas.
  8. Enjoy the fruit salad!IMG_3777

Prioritize our Mental Health for the month of May no

Prioritize Mental Health for the month of May

Originally for the month of May I had the idea of “spring cleaning” and organizing.

But as this pandemic has been ongoing, I decided right now, prioritizing mental health was key. 

The pandemic has definitely changed routines and lifestyles, and often times, that can wear on us in many ways. Our mental health can struggle it hard times and I hope all of you are doing well.

I outlined a few things to do each week that can increase areas of mental health.

It is mentioned a lot but as you all know, sometimes we forget to take time for our mental stability. It’s not a selfish thing to make sure you yourself are doing ok. In fact, if you are mentally health, it greatly helps your relationship with your family and loved ones.

With that, here is my calendar below. There is a clickable link that you can print off as well.

For this first week it is encouraged to listen to an uplifting podcast for at least 10 minutes each day. Right now I have a few podcasts I am enjoying: “Better Than Happy with Jody Moore,” “The Joy Factor,” and “Stuff you missed in history class.”

As always I would love to hear more ideas. What keeps your mental health in check?

Hopefully you can find that peace you need to feel right now.

Health Check-in: How are you doing, really?

Wanted to check in and see how you are doing?

Are you making it through this pandemic ok?

Be honest, I know you can’t talk to me directly but I will just say, if you need to talk to someone….just do it!

This is a very hard and challenging time and there is bound to be hard days so don’t feel bad or guilty about it. 

Probably the worst thing you could do is bottle up your emotions and let them burst. 

Know that you aren’t alone, this pandemic has some silver linings, but it is also really hard to stop all routines and quarantine.

With that being said, this month I shared my monthly goal which was to “Prioritize health.”

Each week I focused on different fitness or nutrition challenges. They have been challenges, and I have not been perfect, but setting goals for health really makes such a difference on your entire body, your entire soul benefits from your physical health and I could feel that. 

So I encourage you to join me this week, the challenge is to walk or run for 25 minutes or more each day. Here in Utah we are able to walk and run outside and that is what I will be doing! However a treadmill or anything works great.

I promise you that if you prioritize “yourself” by taking 25 minutes out of your day to work on your physical health…you will be happy!

Also, this is a great way to incorporate your family…take a family walk or run or bike ride.

I am excited for this weeks challenge and I hope you enjoy it too!

Gluten or Gluten-free Game with my husband!


What are you doing for date nights with your spouse during this quarantine time?

Well my husband, was a good sport and was willing to play this game with me and I filmed it.

My husband eats gluten-free meals for dinner because I have to eat gluten-free, however, he still likes his regular food items too.

See how well he can distinguish the difference between food that is either gluten-free or has gluten….he is blindfolded so it’s a taste test for him!
