Delicious Lemon Lush Dessert/Gluten-Free

Growing up I had a favorite lemon dessert and it was this Lemon Lush Dessert. 

When I was diagnosed with celiacs disease lemon lush dessert was just one more item that I couldn’t eat and enjoy.

However, after years of working on gluten-free cooking, I have finally perfected this recipe gluten-free!  I hope you enjoy it and please comment below if you end up making it!

Gluten-Free Lemon Lush Dessert

Ingredients

  • 1 cup gluten-free flour (I use cup4cup)
  • 1/2 cup chopped walnuts
  • 8 tablespoons (1 stick) butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 ounce) container frozen whipped topping, thawed and divided out
  • 1 (3.4 ounce) package vanilla instant pudding mix
  • 1 (3.4 ounce) package lemon instant pudding mix
  • 2 2/3 Cups Milk
  • canola oil spray (grease pan lightly)

 

 

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit

2. In medium bowl combine flour, walnuts and butter and mix until well combined.

3. Press onto the bottom of a 9 x 13 pan, bake until lightly brown, about 15 minutes.

4. Let crust cool.

5. In a medium bowl, place cream cheese and mix or beat with a beater.

6. Add powdered sugar and mix or beat until the texture is fluffy.

7. Add 1 cup whipped topping to cream cheese mixture and fold in.

8. Spread over cooled crust.

9. In a medium bowl, combine pudding mixes and milk. Beat this mixture until thickened.

10. Spread this mixture on top of cream cheese layer.

11. Next top the remaining cool whip over the pudding layer.

12. Optional, add walnut crumbs over the top of the layers.

13. Cover the dessert and allow to chill in the fridge for at least an hour.

14. Eat and enjoy!!

Day 2: Father’s Day Gift ideas

The former quarterback of the 49ers, Steve Young, wrote a wonderful book entitled “QB:My Life Behind the Spiral.”

This book goes into detail about Steve Young’s football career and his life. The book addresses Young’s biggest weaknesses as well as his successes.

Tasty Korean Beef/Gluten-Free

 

This Korean Beef recipe has been a family favorite for years. The best part with this recipe, is that if you use Braggs Liquid Aminos instead of soy sauce … it’s a simple way to keep it gluten-free and also flavorful.

This recipe only takes about 30 -40 minutes to prep and make.

Our family loves eating this Korean Beef over rice or rice noodles.

The recipe and instructions are below, go make it for your family this week!

Korean Beef Recipe:

 

Ingredients:

  • 1lb hamburger
  • 1 Tablespoon EVOO
  • 1/2 teaspoon minced garlic
  • sprinkle lawrys seasoning salt

Sauce:

  • 1/2 cup brown sugar
  • 1/4 cup Braggs liquid aminos
  • 1 Tablespoon Sesame oil 
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon ginger
  • dash of white pepper
  • dash of crushed red pepper 

 

Directions:

1. Place frying pan on medium heat.

2. Add olive oil and spread it across the pan.

3. Add minced garlic and stir constantly for 2-3 minutes.

4. Place hamburger in pan and cook thoroughly.

5. Drain fat from hamburger, set aside.

6. Start making the sauce in a separate bowl.

7. Add all sauce ingredients and stir thoroughly so there’s no clumps.

8. Turn hamburger pan back on low heat and stir in sauce.

9. Let the sauce cook in for 5 minutes.

10. Place Korean beef on top of rice.

11. Garnish Korean beef with green onion.

12. Enjoy!

How to take time to Read

If you’re following me, you’ll notice this month my goal is to take time for your mental health.

Last week I worked on my mental health by listening to a podcast everyday …. this week my goal is to read for 20 minutes a day. It’s amazing how reading does wonders for your mind and mental health. Reading is a great way to relax and get absorbed into a story.

Relax and Read!

I know it’s EASY to find reasons not to read a book. However, reading a book is so great for mental health in a variety of ways. Here is a list of ways to take time for reading without feeling guilty :

1. Read a book that helps you learn a new skill and feel accomplished after your finished reading. Even if the skill is a “self- help” or “how to better your life” type of book… read it.

2. Find a genre you know you love. When you’re easily sucked into a book there’s less of a reason to think about your long “to-do” list while reading.

3. Remind yourself that reading is taking time-out for yourself and it’s not selfish … reading is uplifting and can help you be more productive in the long run.

4. With the great weather starting to settle in… read a book outside to soak up some natural vitamin d as well.

5. Join a book club and read along with your group. Being able to socialize and discuss the book is not only fun, but great for your deep thinking skills!

So …..go find a book you think you’ll enjoy and start reading!

During this pandemic where the world has turned upside down a bit, take time to enjoy some fun reading and I think you will be surprised by the positive effect reading has on your mental health and stability.
